As university doctor and agricultural engineer, Sylvain spent the first 10 years of his scientific career working as a researcher and teacher in ruminant nutrition and physiology in France, at Clermont-Ferrand (INRA) and Nancy (University of Lorraine). Since 2018, he joined Agroscope, where his research aims to ensure beef production that combines efficient and resilient farming systems with superior sensorial and nutritional qualities, and sanitary safety. His work focuses on i) characterizing the trade-off between efficient use of forage resources and the capability to adapt to environmental constraints in growing cattle, ii) the mechanisms by which organic contaminants from the environment (dioxins, PCBs, PFAS) are transfered to milk and meat in cattle and sheep farming systems, and (iii) the development of imaging techniques (2D, 3D, X-rays) for estimating body, carcass, and meat composition.
