DARF: Distillate – Swiss Alcohol Board

The DARF project- in mandate by the BAZG aims to improve Swiss Distilled products by performing research into raw material quality, mashing and fermentation technology, distillation, quality control -improvement and -assessment, product knowledge, determination of authenticity and sensory assessment of distilled spirits. Additionally the projects assists in education and scientifc dissemination by participating in the basic training courses organised at cantonal level in the field of distillation. The tasks are agreed on in a contract (attached) and the research projects are brainstormed in a FORUM process with the industry and prioritized with stakeholders. In instances where it is deemed appropriate, the application of our process technology knowledge in the domains of fermentation and distillation will be pursued for the purpose of valorising side streams.
