Valorisation of Swiss agricultural food through fermentation with Liebefeld cultures

The SwissAgriFerFood project is an interdisciplinary project with the objective to add more value to Swiss agricultural products and local food side-streams by fermentation using the strains from the Agroscope culture collection. In particular, the sequenced strains of the collection will be extensively used as a resource to identify suitable strains and strain consortia that not only have the ability to ferment the plant matrices, but also to produce health- and aroma-relevant substances in the matrix. The results obtained can serve as a basis for the production of new microbial cultures, which will then be available to Swiss food manufacturers in the future. The new fermented agricultural foods created with additional benefits will further enhance the Swiss agricultural food product range. The long-term goal of the project is to make better use of agricultural and microbial biodiversity for human health via nutrition and to create added value for Swiss agriculture with innovative fermented functional foods, developing a new variety of products that sustainably expands the range of Swiss foods, supporting Switzerland's food security and independence from food imports.
