Le 3-mercaptohexanol est une arôme importante pour certaine cépage, comme la Petite Arvine ou Divona. Son quantité peut être déterminer après une dérivatisation en utilisant la technique de chromatographie en phase liquide couplée à une spectromètre de masse (LC-MS).
Cette thiol se forme pendant la vinification. Ses précurseurs sont présentes dans le raisin et peuvent être quantifier par LC-MS/MS. Les méthodes automatisés ont été développés à l'Agroscope et présentés à cette journée.
