Hepatitis-E-Viren (HEV) sind in Haus- und Wildschweinen weit verbreitet. Primär ist die Leber betroffen, HEV wurden aber auch in Muskelfleisch gefunden. Sie können über ungenügend erhitzte Fleischerzeugnisse auf den Menschen übertragen werden. Auch der Metzger kann im Alltag zur Senkung eines Infektionsrisikos beitragen, indem er seine Kundschaft informiert und darauf hinweist, dass sie schweineleberhaltige Fleischerzeugnisse gemäss Zubereitungshinweisen erhitzen und diese nicht zu früh aus dem Wasser nehmen sollen.
